Another dish from Ben O’Donoghue (The Best in Australia) that I often cook is Ma po tofu. Ma po tofu is a Chinese dish from Szechuan province which consists of tofu and pork mince in spicy chilli and bean sauce. See here for further info on ma po tofu.

I love tofu (bean curd) and this dish is very tasty, light and easy to make . Tofu is made from soy bean and contains a high level of protein,  further information can be found here.

Tonight, I made double the recipe below. It’s sooooo yummy. Serve with hot steam rice, this dish is very satisfying.

Ma po tofu

(from The Best in Australia, Ben O’Donoghue)

(serve 2 – 3)

  • 250 gr silken tofu. I used normal soft tofu (not firm).
  • 250 gr pork mince. I used pork and veal mince.
  • 2 tablespoons sunflower oil. I used olive oil.
  • 1 tablespoon of ginger, finely chopped
  • 2 garlic cloves, chopped
  • 3 spring onions, 2 chopped and 1 sliced on the diagonal for garnish
  • 1 tablespoon chilli bean paste (toban jiang)
  • 2 tablespoons dark soy
  • 1½ tablespoon Shao Xing rice wine (can substitute Sherry)
  • 1-2 tablespoon cornflour
  • 250 ml chicken stock. I used 1 chicken stock cube dissolved in water.
  • 1½ teaspoon sesame oil dark
  • 1 red chilli, chopped

Step 1. Heat the oil in a wok and stir-fry the mince until cooked stirring with a spatula until it is all separated. Remove and drain in a colander.

Step 2. Re-heat the wok and add the remaining oil. Add the ginger, garlic and chopped spring onion and fry for 2-3 minutes.

Step 3. Return the mince to the wok and combine, then add the chilli bean paste and chopped chilli and combine. Add the dark soy, rice wine and sesame oil and cook for 2-3 minutes.

Step 4. Combine the corn flour with the chicken stock, add to the mince mixture to thicken and cook for 2-3 minutes. If the mixture is too thick, thin with additional water.

Step 5. Dice the tofu and add to the mince mixture and gently stir. Be careful as the tofu is delicate and you don’t want it to break up.

Step 6. Place the mince mixture in to a serving bowl and garnish with the sliced spring onion. Serve with steamed rice.
