I love fish and chips :). It’s a very popular dish in Australia. When I stayed in Perth, I remember my uni friends and I often went to Fremantle and enjoyed the fish and chips there by the pier. Usually the fish is battered and then deep fried, and the chips are also deep fried. The fish and chips shops wrap them in paper, not using plates or containers (for take away).

This version of fish and chips are not fried, but baked/ roasted, so it’s a lot healthier. For the fish, I follow a recipe from Donna Hay magazine (Aug/ Sep 2009 issue 46). For the chips, I simply roast them with olive oil, rosemary, salt and pepper (idea from Aussie Farmers Direct). I served them with broccoli and mixed of greek yogurt and sour cream.

Roast potato wedges

  • 12 potato chats
  • 1 teaspoon of rosemary
  • olive oil, salt, pepper

I used ‘royal blue potato chats’. They have gorgeous colour and they are suitable for roasting. Simply cut the potatoes into quarters (no need to peel), then mix with rosemary, olive oil, salt and pepper. Then bake at 200ºC in fan forced oven for about 30 mins or until golden brown.

After this we can prepare the fish.

Parmesan-crumbed fish

(serves 6)

  • 1 cup of breadcrumbs
  • 3 tablespoons of grated parmesan
  • grated lemon rind from 1 lemon
  • 3 firm white fish fillets (I used seabream), cut each fillet into 2 length-wise
  • plain flour for dusting
  • 2 eggs, lightly beaten
  • olive oil

Step 1. Place breadcrumbs, cheese, lemon rind into a bowl and mix well.

Step 2. Dust the fish in flour and shake off any excess. Dip in the egg and press in the breadcrumb mixture.

Step 3. Place fish on a baking tray lined with non-stick paper. Drizzle fish with olive oil or you can use the oil spray.

Step 4. Bake in 200ºC fan forced oven for 15 to 20 minutes or until golden brown.

Yogurt and sour cream dip

  • 1/2 cup of natural greek yogurt
  • 1/2 cup of light sour cream
  • 1 teaspoon of paprika

Mix all the above and serve.

Here are the healthier version of fish and chips :). They taste yummy, the fish has a hint of parmesan and lemon and the dip complements the dish very well.
